BALSAMIC HONEY CHICKEN WITH PEARS

- 2 Boneless Skinless Chicken Breasts 4 oz each
- 1 T-Sp Extra-Virgin Olive Oil
- 1 Clove Chopped Garlic
- Pinch of Salt and Pepper
- 1 Large Pear...Peeled and Sliced
- 1/2 Cup Chicken Broth...Low Sodium
- 1 T-Sp Corn Starch
- 2 Tb-Sp Balsamic Vinegar
- 1 Tb-Sp Honey
- Place a large skillet on medium high heat:in the meantime pound the Chicken to 1/2 inch thickness
- Season with salt and pepper.
- In a warm skillet,over medium heat, add the Olive Oil and Chicken.
- Cook and turn until meat is browned on both sides and 165F on inside.
- Remove from pan and keep warm
- Lower the heat and cook the garlic until its soft.
- Add the Pears and continue cooking until they are softer and browner.
- In a small bowl combine the remaining ingredients and pour over the pears into the pan.
- Increase the heat until the juices come to a boil.
- Quickly reduce the temp,simmer and watch the sauce "reduce" ie thicken.
- Return the chicken to the skillet and heat for 2 mins
- Plate in layers...Chicken then pears with sauce covering the presentation.
** If you want to include a grain etc..Half a cup of Brown Rice or Quinoa = 110 calories
